For the lemon cake, preheat the oven to 180 °C. Beat the eggs and sugar in a food processor until frothy.

Add flour, vanilla sugar, baking powder, lemon zest, softened butter and cinnamon gradually and mix well.

Line a baking tray with baking paper and spread the dough on it. Bake for 20 minutes.
