Instructions:

Rinse the potatoes, remove the skin and cut them raw into slices. Peel the shallots and cut into rings.

Blanch the potatoes in salted water, add the shallots and cook for 5-7 minutes, drain and place on a baking tray.

Chop garlic and put in mortar form with salt, chopped basil and crush finely. Stir in olive oil, pine nuts and grated Parmesan and continue to pound.

Arrange potato slices on a platter and spread the pesto evenly over them.
