Wash the chicken and the soup vegetables and herbs. If desired, divide the soup chicken into four parts so that it will fit more easily into the soup pot later.

Place the chicken, vegetables, parsley and spices in a very large pot. Pour cold water over everything until the chicken is completely covered. Add salt and bring the soup to a boil.

Now let it steep for about 4 hours at more than simmering. Put the lid on the soup pot so that the liquid does not evaporate.

When the soup is done, remove the soup chicken and scoop out the meat. Cut into bite-sized pieces. Empty the soup through a strainer, collecting the liquid.

Chop the soup vegetables to use as soup garnish.

Serve chicken soup with some meat and vegetables.
