For the mint pesto, carefully wash the mint and shake dry. Cut into fine sprigs and place in a mortar. Mix the hazelnuts, maple syrup and grape seed oil and gradually add to the mint in the mortar and pound vigorously with the pestle. Season the mint pesto with lime juice to taste.
