For the roasted char with garlic herb butter, drizzle fresh char fillets on both sides with lemon juice and season with salt.

Heat oil and a knob of butter in a frying pan.

Turn the char on the skin side in the flour, add to the pan and fry on a lower flame. It will be juiciest this way.

If you are not quite sure if the fish is done, just take a fork and carefully go through the flesh at the thickest part of the fish and see if it is still raw in one place. If not, flip to the tender flesh side and sear briefly, then quickly flip again. (For those who want to be on the safe side).

For the garlic herb butter, place the tea butter in a smaller saucepan and melt. Squeeze the garlic cloves and add to the butter with the herbs – stir well and you’re done. If you want, you can add a little lemon and salt to improve it. But this is a matter of taste.
