Instructions:

Bring milk with chestnut puree and vanilla bean to a boil while stirring. Meanwhile, stir yolks and sugar until the mixture becomes whitish and homogeneous, add rum.

Remove the chestnut milk from the heat and add it to the egg yolk-sugar mixture, stirring vigorously.

Return to the saucepan and heat until just below boiling point (must not make !!), Stirring constantly until the cream is sufficiently thick.

Remove from heat and meanwhile continue to stir heartily for at least 2 min.

Pour into a suitable bowl and leave to cool for 2 to 3 hours. Remove vanilla bean and bring to the table.
