[…] Our vegetable/potato cake is called differently everywhere: Scarpazza, Smeazza, torta dei fra. In Liguria it is the Easter cake. Every region has its own name.” Smeazza: cut the vegetables quite small and steam them in a little butter for a few min until they collapse. Then mix with the cheese cubes, beaten eggs and flour dissolved in a cup of water. Season with salt and pepper. Form into a baking dish, spread butter flakes evenly over it and bake in a hot stove (200 to 220 degrees ) for forty-five minutes until a nice golden brown crust appears.
