For the pink beet eggs, hard boil the eggs. Peel and pour into a sealable jar. Top with beet juice and refrigerate for at least 24 hours. Then remove from juice, dry, crack and serve.

The beet juice for the pink beet eggs can be additionally refined with a little vinegar, pepper, onions, bay leaves and other spices of your choice.
