Preheat the oven to 160 °C. Cover the baked crêpes with aluminum foil and keep warm.

Put the lemon peel and juice in a large enough bowl. Remove the peel from the apples, cut them into quarters, remove the core and cut the fruit into slices. Immediately mix with the juice of one lemon.

Heat the butter in a wide frying pan. Add the apple slices together with the juice of one lemon and steam briefly until soft. Sprinkle the sugar over the apples. Add the Calvados and ignite it on the spot. Make the apples quietly until they are just soft, they must not fall apart.

Cover the crêpes with the apples, drizzle a little juice over them and roll up. Arrange on plates. Add a scoop of vanilla ice cream to each. Serve the dessert on the spot.
