For the crema fritta, sift the flour through a fine hair sieve into a saucepan and mix with the eggs, sugar, vanilla pulp and lemon zest. Gradually add the milk and let it simmer for 10 minutes just below boiling point, stirring constantly, until a thick creamy consistency is obtained.

Pour the cream onto a greased baking sheet, shape it and let it cool. Cut small squares from the stiffened cream. Roll them first in breadcrumbs, then in beaten egg and then again in breadcrumbs.

Fry in enough heated clarified butter until golden brown. Lift out, drain and serve the crema fritta hot sprinkled with vanilla sugar.
