For The Egg Cream:







Instructions:

Bring the milk, lemon zest and sugar to a gentle boil. Reduce heat and pour in macaroni.

Cook them gently in the milk until they are soft but still crunchy. If the milk evaporates before the macaroni is soft, add more milk.

Transfer the macaroni to a suitable bowl and pour the egg cream over it.

This simple but satisfying dessert is enhanced with a little freshly grated nutmeg.

For the egg cream :

Beat the eggs well and stir them into the cooled milk. Pour the mixture repeatedly into a clean baking bowl. Then stir constantly in a boiling water bath until the egg cream has thickened. Do not let it bubble up or lumps will form.

When the cream has thickened, remove from the kitchen heat and stir in the brandy.
