Instructions:

Cut the avocados in half, remove the stone and peel the halves. Cut into small cubes. Mix together the juice of one lemon, oil, pepper, salt, mustard and coriander powder. Add the avocado cubes on the spot and mix thoroughly with the sauce.

Cut the onion or leek with the greenery into rings, then into small squares. Cut the tomatoes diagonally in half, scrape out the seeds and cut the flesh into small cubes. Remove the seeds from the peppers, rinse them and cut them into cubes as well. Remove the shell from the egg and chop finely. Cut the chives into rolls. Chop the parsley and garlic. Add all these ingredients to the avocados form.

Season the tartar with cayenne pepper or Tabasco, Worcestershire or soy sauce and, if necessary, salt and freshly ground pepper. Serve with tortilla toast or chips.

Tip: As an alternative to fresh chives, you can also use freeze-dried chives.
