Kroppkakor (potato dumplings with bacon filling)
Cook the potatoes, cool and mash. For the filling, cut bacon and onions into fine cubes and brown in a saucepan. Season with pepper and cool. Mix the mashed potatoes with eggs, flour and salt and knead into a dough. Form into a thick roll, cut 10 to 12 on the spot pieces from it for the dumplings. Press a bulge in each dumpling, fill in bacon filling and enclose with dough. Shape into balls and flatten a little bit. Carefully place the dumplings one after the other in a saucepan with boiling hot salted water, let stand for 15 to 20 minutes. Serve with melted butter.
