For the curd pancakes with cranberry jam, mix the salted flour with part of the milk until smooth and finally stir in the eggs and the remaining milk.

Heat a pan with oil until very hot and place a ladle of batter in the center, turning the pan so that the bottom is thinly covered with batter. Bake on both sides until golden brown.

For the curd filling, cream butter until fluffy, stir in sugar and egg, and finally mix with curd.

Fill the pancakes with curd filling and with 1 tablespoon of cranberry jam and beat together.
