Instructions:

Spread out four sheets of aluminum foil, brush the center of the sheet with a small amount of butter and place the gilthead fillets, skin side down, one at a time. Rinse the arugula, remove the stems, roughly chop the leaves and place them in portions on the fillets. Now add very thin slices of lemon, garlic and pine nuts. Roast the pine nuts before without fat. Now add pieces of butter, olive oil and Noilly Prat, a little salt and pepper and finely ground fennel seeds. Close the packets well and put them in the oven at 200 °C for 15 minutes. Now tear open the packet and eat it with a baguette or jacket potato.

The fish packets can just as well be put on the broiler.
