Cut the papayas in half and scrape out the seeds with a spoon. Peel off the halves of the fruit and cut into bite-sized pieces (be careful: the juice is irritating to the eyes! In case of contact, rinse with water on the spot). Halve and seed the peppers, remove the white pulp and cut off the pod. Cut the chili pepper in 2 halves, remove seeds. In a large frying pan, heat oil and sauté onion for 2 minutes. Stir-fry chili and bell bell pepper for 3 to 3 min. Add garlic and ginger and sauté for 1 min. each, but do not brown.

Add the papaya pieces and sauté over medium heat. Season everything heartily with salt and soy sauce and sauté with the lid still on for about 3 minutes until tender. Remove the vegetables from the frying pan and set aside. Heat about half of the coconut milk in the fat of the frying pan, fold in the turmeric and simmer gently for 3 min. Repeatedly add the vegetables, pour in the remaining coconut milk, and briefly bubble the entire thing repeatedly. Remove the 2 chili halves, season repeatedly and bring to the table. Additional dish: white long grain rice, best cooked in steam.

Info: papayas (they must look green-yellow or light green, with large yellow spots, sometimes just as dark speckles. Unripe papayas are hard and green with only a few yellow specks on the stem. Overripe fruits are lemon yellow and have brown spots).
