For the Mediterranean millet vegetable soup, wash the carrots, tomatoes, potatoes and zucchini. Peel the carrots and potatoes and cut them into small cubes, as well as the zucchini and tomatoes.

Heat the olive oil and sauté the carrot cubes in it. Add 2 liters of water. Add the millet and the rest of the vegetables except the tomato cubes. Season with salt and pepper. Bring to a boil and then simmer over medium heat for about 20 minutes.

Just before the end of the cooking time, add the diced tomatoes. Season to taste and serve.
