Instructions:

It works just as well with a TL, but the gougeres don’t look quite as nice then. Put them in the oven: Bake at 200 °C (convection oven 180 °C, gas mark 4) for about 20 minutes to make wonderfully airy cheese puffs: crispy on the outside and hollow but juicy on the inside.
