Instructions:

Cut or chop the ribs into smaller portions (3-4 ribs each).

Bring water to a boil in a pot and blanch (scald) the ribs in the boiling water for 5 minutes. Lift out and drain.

Finely chop the ginger and scallions. Mix both in a bowl with all the ingredients for the marinade. Add ribs and marinate for 1-2 hours.

In the meantime, turn them from time to time.

Then place the ribs in a baking dish or on a baking tray, pour the marinade over them and roast in a preheated oven at 170 °C for approx. 40 minutes.

Turn over halfway through the roasting time and sprinkle the ribs with marinade from time to time. If necessary, add a little water or soup.

Shortly before the end of cooking, brown the ribs with the fat side facing up for about 5 minutes under the grill coil or at high top heat until nice and crispy.
