* Rinse 4-6 people of long-grain rice under cold tap water, drain properly. Heat ghee or possibly oil in a saucepan. Stir-fry onion until soft. Add garlic, turmeric and ginger and heat for 1 minute, stirring. Add long-grain rice and stir until coated with oil.

Add cloves, cardamom, garam masala and tap water. Cover and simmer on low heat for 20 minutes. Remove from heat, add raisins. Loosen long grain rice with a fork, cover and let stand for 5 min before serving.

Be sure to cook with basmati long grain rice, as its delicious aroma and delicate fragrance are an excellent complement to the spices.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
