For the zucchini cake with glaze, first preheat the oven to 160 °C and cover the baking tray with baking paper.

The washed zucchini are now grated with a grater or in a food processor and then set aside to drain. They should not be too wet or too dry for further processing.

Next, beat the eggs with the sugar and vanilla sugar until foamy. Gradually add the oil. Also add the salt, cinnamon and nuts.

Mix the flour with the baking powder and fold into the egg-sugar mixture, alternating with the grated zucchini.

Now the dough is put on the tray, smoothed and baked for about 40 minutes.

When the zucchini cake has finished baking and has cooled down, it is spread with apricot jam and then covered with a thin layer of chocolate icing.
