Cut chicken breasts into slices. Wash Chinese cabbage leaves, drain well and cut into fine strips. Wash lamb’s lettuce, strain canned beetle beans, rinse with cold water and mix with all ingredients in a salad bowl. Marinate vigorously with pumpkin seed oil, vinegar, salt and pepper and season to taste.
