Exotic and classy you can treat your guests with a great fish dish: Sea bass with shrimp aborrajados, leek vegetables, ravioli and avocado sauce. Get to the oven – simple, delicious and healthy! Cook the fish fillet with skin from the fishmonger you trust and cut it into ten portions. Important: keep the fish in the refrigerator. For the plantain casserole, cut the plantain into small cubes, called brunoise, and deep fry. Save a piece of banana, cut it as julienne (in strips), also deep-fry it and keep it for decoration. Place the fried banana on paper towels to drain. Cut mozzarella into cubes as brunoise. Then mix eggs, whipping cream, soft butter, pulp of vanilla bean, sugar and salt, and add the fried bananas and mozzarella.

Put the mixture into a shallow rectangular baking dish and bake in the oven at 160 degrees for about 15 to 25 min. The whipped cream-egg mixture must be stout and the mozzarella melted. Cut the plantain casserole into rectangles.
