For Indian-style spinach, defrost the spinach, squeeze (reserving the liquid) and cut into bite-sized pieces. Cut the onion into fine rings. Heat the butter and oil in a pan and sauté the onion rings until translucent. Add the spices, chopped garlic, grated ginger and sugar and sauté for 1 minute. Then add the spinach, as well as the collected liquid. Cover and sauté over medium heat for about 15-20 minutes (the spinach should still be firm to the bite). Finally, stir in the sour cream and season the spinach with salt and pepper.
