Grease four small pudding molds (total capacity 850 ml) and sprinkle with cocoa. In a large saucepan, pour enough water so that the water goes about two centimeters below the edge of the molds.

Later, melt the chocolate in the water bath and stir with the butter until creamy. Separate the eggs. Fold the semolina, egg yolks, walnuts and breadcrumbs into the chocolate. Whip egg whites with sugar(1) until very stiff and fold into chocolate mixture as well. Pour the dough into the prepared pudding molds and cook in a water bath for about thirty minutes.

Take four tablespoons of the milk and boil the rest with the pulp of the vanilla pod. Mix the cornstarch with the sugar(2) in the four tablespoons of milk and add to the boiling milk while stirring.

Serve the vanilla sauce with the carrots.
