To make the lemon poppy seed mug cakes, first place the butter in a cup and microwave at 800 watts for about 1 minute until liquid. Place the egg in a mixing bowl. Whisk with the sugar and salt using a hand mixer until fluffy. Add the lemon juice and zest and whisk in with the poppy seeds. Now whisk in the butter. Sift the flour over it and stir in briefly.

Grease two cups with butter. Divide the batter between the cups. Place one after the other in the microwave at 800 watts for 1:50 minutes. Remove and turn out or let cool in the cup.

If preparing without microwave, use oven-safe cups. Melt the butter in a small pan. Preheat the oven to 180 °C and bake the lemon poppy seed mug cakes on the middle rack for about 25 minutes.
