Instructions:

Chop the onion, apple and bacon.

Fry everything together with the finely chopped garlic in the lard. At the same time caramelize with the sugar.

Add the sauerkraut and pour the vegetable broth.

Add bay leaves, juniper berries and caraway seeds. Season with salt and pepper.

Simmer the sauerkraut for a good hour so that the liquid is reduced by a third.

Add apples, onion, garlic and bacon.

Cook with soup and spices (bay leaf, caraway, juniper berries)

Simmer so that the liquid reduces and the flavor becomes more intense

Leave to infuse overnight in a cool place
