For the elderberry pear, cut the outside of the pears and partially peel them (checks, ringlets, longitudinal stripes, etc.). Cut off a base at the bottom and poke out the core from this side with a ball piercer. Then simmer in elderberry juice with vanilla sugar and cinnamon bark until semi-solid (check with toothpick) and remove.If you want the pears very strong color, let the juice cool and then put the fruit again until the desired color.

Mix curd, sugar, lemon zest and juice, marzipan or quince jam and fill into the pear cavity with a smallspoon or piping bag.

Serve the elderberry pear with whipped cream as a dessert.
