For the formaggini in oil, let purchased or homemade cream cheese dry well beforehand. To do this, unpack the cream cheese and place it on a plate in the refrigerator.

Drain the whey and turn the cheese over. If the plate remains dry, the cheese can be put in.

Cut the cream cheese into square cubes, layer them together with bay spice, peppercorns, rosemary needles alternately in the jar. On top put half a dried chili pepper and a clove of garlic.

The jar should be filled only to below the screw rim. Then pour as much olive oil over it until the ingredients are just covered. There should still be some air between the oil and the lid.

Store the formaggini in oil in a cool place but not in the refrigerator.
