Turn on the grill function of the oven.

Mix the flour with the egg yolks, vanilla pulp, milk, lemon zest and the melted butter until a smooth batter is formed.

Whip the egg whites with 2 tbsp sugar and a pinch of salt until creamy and firm, then fold into the flour mixture with the rum raisins.

Foam 1 tsp. butter in two small frying pans at low temperature, pour in the dough to a height of about 1 cm and brown on the underside for about 2 minutes. Cook in the heated oven for another 3 minutes until lightly browned on the surface.

Cut the pancake into bite-sized pieces, add the remaining butter with the remaining sugar and caramelize the pancake.

To serve, sprinkle with the toasted almond flakes and powdered sugar.

Serve with apple compote roasted on the stove.

5 Peel apples, remove core and cut into larger pieces. Mix with 80 to 100 g sugar, juice of ½ lemon, pulp of ½ vanilla pod, cinnamon stick, ¼ star anise and 2 tbsp butter, form into a gratin dish and steam in 20 to half an hour in a heated oven at 200 °C, stirring frequently until soft.

Tip: It is best to use your favorite ham – then your dish tastes twice as good!
