Instructions:

1. potatoes and carrots cover with enough water, bubble and gently 10 min. If you use fresh hominy, form it meanwhile the last 4-5 min to. Drain vegetables and set aside.

2. grease an ovenproof baking dish of 20 cm ø.

Pour in potatoes, carrots and corn kernels. Cover with zucchini and peppers, add olives on top.

4. bake in a heated oven at 190 °C (gas mark 5) for 45 minutes until the surface is golden brown.

Serve hot.
