For ragout with minced meat á la Stroganoff, finely chop the onion, finely slice the mushrooms. Cut the gherkins into small slices.

Heat oil in a pan, fry minced meat and onion, add mushrooms and fry. Season with salt and pepper, dust with flour, let sweat.

Add white wine, vegetable soup and whipping cream. Stir in mustard and bring to a boil. Mix in gherkins and simmer for a few minutes.

Season again with salt, pepper and sugar.
