Defrost frozen lamb.
For the crust, mix well butter and kitchen herbs, season heartily with the spices. Add breadcrumbs and hemp flour, season repeatedly, knead until firm. Form into a roll and put to cool.
Season the lamb fillets with salt and pepper, sear on both sides in a little fat. Cut the hemp-herb crust into equal slices and cover the meat with them. Bake under the broiler until the crust is lightly browned.
Finely chop garlic cloves and bring to a boil with lamb stock. Just before serving, add the toasted hemp seeds. The amount on plates form, the meat on it arrange.
Serve with potato patties.
Our tip: As an alternative to fresh herbs, you can also use frozen ones – these are also characterized by a fresh taste!
