Preheat the oven to 200 degrees (convection oven).

Lay out the puff pastry on the countertop, roll it out lightly with the pasta hoz and brush it with a little egg yolk. Grind the coriander over it, then spread the orange zest and a thick layer of chocolate evenly on top.

Fold the puff pastry over the center, roll over it briefly with the pasta walker. Cut into long sticks, place them on a baking sheet lined with parchment paper, brush with the remaining egg yolk and bake in a heated oven for about ten minutes until golden brown.

Cool the cilantro sticks and place them vertically in a wide glass to serve.

Tip: Do you prefer milk chocolate or dark chocolate? Depending on the case, use what tastes better to you.
