For the kohlrabi in hollandaise sauce, peel the kohlrabi and then cut into even strips (like French fries). Then cook in enough salted water until firm to the bite.

For the sauce, put the egg yolks with lemon juice, a little salt, sugar and crème fraîche in a tall container and puree with a hand blender until smooth.

Now briefly bring the butter to the boil, slowly add it to the vessel while running the blender. Season with salt, pepper and nutmeg.

Drain the kohlrabi and pour the sauce over the kohlrabi. Serve the kohlrabi in hollandaise sauce with boiled potatoes.
