For the apple chili chutney, peel, core and coarsely chop the apples. Coarsely chop the garlic and chilies. Finely dice the onion, sauté with the oil until translucent, add about half the amount of sugar and let it caramelize.

Deglaze with vinegar and add apples, garlic, chilies and all the spices. Let it boil down for about half an hour until it has a thick consistency.

Puree with a hand blender and pour into jars while still hot and seal carefully. Season to taste after pureeing.
