For the baked tomatoes, peel the potatoes and cut them into slices. Wash and dry the tomato, remove the stalk and cut into slices.

Cut the mozzarella into slices. Lightly oil the bottom of a baking dish, flake the potatoes as a base. Season with salt and pepper.

Place a row of tomatoes on top, a row of mozzarella, sprinkle with a few drops of oil, salt and pepper. Bake in the preheated oven at 200 °C for about 15-20 minutes until the cheese is melted and lightly browned.
