For the Almo ox tartare with pickled mustard squash, finely chop the cucumbers, anchovy fillets and capers.

Blanch the shallots briefly in boiling water, allow to cool and also chop finely.

Cut the clean, well cooled meat first into strips, then into fine cubes and chop finely with a chopping knife.

For the marinade, mix all ingredients together well and add to the tartar.

Season to taste.

Mix gherkins, shallots, capers, anchovy fillets and mustard into the tartar and serve.

Serve with mustard squash, fresh herbs and a little pumpkin seed oil.
