For almond stars, first roast the almonds: To do this, slowly roast grated almonds in a pan without fat until they begin to smell. Allow to cool.

Then prepare the dough: To do this, cream butter, gradually add sugar, salt, vanilla sugar and flavoring. Add the egg whites, sprinkle with flour and toasted almonds and mix everything with a wooden spoon. Wrap the dough in plastic wrap and let it rest in the refrigerator for an hour.

Knead the dough again thoroughly. Flour a wooden board. On floured work surface, roll out dough to about 3 mm thick and cut out stars. Place the stars on the prepared wooden board and chill again for at least 15 minutes.

In the meantime, preheat the oven to 160 °C and line a baking tray with baking paper. Spread cooled cookies on it, put it into the hot oven and bake for about 10-15 minutes until light yellow. Leave to cool on the tray.

Melt chocolate glaze according to package instructions. Decorate the cooled cookies with the chocolate coating according to taste.

Let almond stars dry on a baking rack.
