Apple and Banana Potpourri on Wine Foam

Cut out apple house, peel apple and cut into slices one and a half centimeters thick, sprinkle with a little juice of one lemon. Peel banana, cut in half lengthwise and diagonally. Using zester, peel zest from orange, peel orange, cut out fillets. Rinse strawberries with green, dry, cut in half. Separate egg yolks from egg whites, whip egg whites until stiff. Mix flour, egg yolks, milk, pinch of salt well and carefully fold in the egg whites.

Beat sugar, egg yolks, white wine in kettle over hot water bath until fluffy. Heat clarified butter in a saucepan to 180 °C, flour apple slices and banana slices, pull through the batter, bake in hot clarified butter until golden, drain on kitchen paper. Then turn in cinnamon sugar to the other side.

Serve:

Pour wine foam on flat plate, place apple rings and banana slices on top, arrange strawberries and orange fillets all around. Shape orange zest on top and garnish with lemon balm.
