For the apple caramel jam, heat sugar in a pan and caramelize. Deglaze with orange and lemon juice, add the apples and cook for 5-10 minutes until al dente.

Mix pectin with a little sugar and stir in pectin with the help of a whisk and cook for another 1 minute until bubbly. Make a jelly test (put some jam on a cold plate and put it in the fridge for a short time.If the jam is too thick, dilute it with some water, if it is too thin, add some gelling agent).

Pour the apple caramel jam into prepared glasses and drizzle a few drops of alcohol over them with a pipette, light and seal immediately.
