For the stewed apples, first lightly heat (caramelize) half of the sugar in a large saucepan, pour in the water.

Add the remaining sugar, the vanilla beans and the cinnamon sticks and cook for about 10 minutes.

Peel the apples, quarter them and remove the core. (If the quartered apples are too big for you, you can of course cut narrower pieces).

Using a skimmer (perforated ladle/spoon), get the spices out of the sugar water and add the lemon juice and apple slices.

Boil for 4-5 minutes, the apples should be cooked but not soft or they will fall apart as they cook down.

Layer the apple slices in the prepared jars, fill with the sugar water and seal.

Boil down the stewed apples at 90 °C for 25 minutes.
