For the apple ice cream with cinnamon, first peel the apples and remove the core. Bring to a boil with sugar and water and simmer until they are soft. If too much liquid remains, remove it. Stir in the cinnamon, finely puree the apples and let cool.

Whip the whipped cream until stiff and fold in the cooled apple mixture.

Pour the mixture into a plastic container and freeze. When the ice cream is half frozen, whip again. Then refreeze until completely frozen.

Refrigerate the ice cream for about half an hour before serving to allow it to thaw slightly. Serve the apple ice cream sprinkled with cinnamon or cinnamon sugar.
