For the apple custard, beat eggs and sugar until foamy. Stir oil and water into the mixture. Carefully fold in spelt flour and bake in the oven at 180°C for 30 minutes.

Soak gelatine leaves in cold water. After 10 minutes, squeeze out and dissolve in some hot rum. First add the applesauce by the spoonful to the gelatin – mix well, then mix the mixed gelatin mixture with the rest of the applesauce.

Spread some of the applesauce on the cake base. Spread sponge cake – spread applesauce again – 3 layers. Spread whipped crème fine all around the apple mousse cake and decorate as desired.
