For the apple pancakes, first prepare the pancake batter.

For this, whisk the eggs with the milk. Add a little salt and flour and mix to a smooth, thin batter. Heat some butter in a pan and pour the batter as thin as possible, bake until golden and turn once carefully. Repeat this process until the dough is used up.

For the filling, boil the peeled, cored, chopped apples with sugar and cinnamon bark in water until soft. After straining, mix to taste with ground cinnamon and a little sugar and fill the pancakes with it.

Serve the apple pancakes immediately.
