For the baked apple pancakes, first stir together milk, eggs, flour and salt. Let the dough swell for about 10 minutes. Remove peel from apples, grate coarsely and sprinkle with juice of one lemon. Fold half into the dough.

Heat oil and bake 4 golden brown pancakes. Allow to cool slightly. Spread with nougat cream, fill with remaining apples and roll up.

Place pancakes in a shallow gratin dish. Stir whipped cream, egg yolk and vanillin sugar. Pour over the pancakes. Bake in the heated oven (electric oven 200 °C, convection oven 175 °C or gas mark 3) for approx. 20 minutes. Serve the baked apple pancakes hot.
