In a large stainless steel saucepan, heat ginger, vinegar, apple juice, allspice seeds, and sugar over low heat, stirring throughout, until sugar is dissolved.

Then let the syrup bubble for 10 minutes. Add the apples to the syrup form and simmer for 10 min. Using a slotted spoon, divide the apples evenly among three warm 1-liter glasses and place a cinnamon stick in each glass.

Simmer the apple juice for another ten minutes, strain and pour into the glasses. Place the jars in a boiling water bath for 15 min. Remove the clamps only after the jars have cooled and check the caps. Makes 3 l.

These pickled apples can be served cooled very well with ham and cold roast pork, but they taste equally delicious as a warm addition to roasts. The spiced apple juice serves on the one hand for stewing the apples and on the other hand – when thickened – as a base for a sauce.

Tip: It is best to use your favorite ham – then your dish tastes twice as good!
