Instructions:

For the applesauce slices, start with the base. For the oil mixture, separate the eggs. Beat the egg whites. Beat yolks with sugar and vanilla sugar until foamy. Slowly mix in water and oil.

Mix spelt flour with baking powder, sift onto the mixture and fold in alternately with the snow. Spread the mixture on a baking sheet and bake in a preheated oven at 175 °C for about 20-25 minutes, then let cool.

For the topping, peel and finely grate the apples. Mix with the applesauce and bring to the boil. Mix the pudding powder with a little water and add to the apple mixture, bring to the boil and cool in a cold water bath.

For the cream, whip the crème legere not too stiff. Mix the sour cream with sugar, vanilla sugar, lemon juice and carefully fold in the crème legere.

Spread the overcooled apple mixture on the cooled cake and spread with the sour cream. Sprinkle with ground cinnamon and refrigerate.
