For the apricot coconut dumplings, wash the apricots, cut them in half and remove the seeds. Replace the pit with a piece of Rafaello.Mix the curd, egg, oil and the pinch of salt. Mix the grated almonds and flour and incorporate into the curd mixture. Moisten your hands with cold water and form 12 nice dumplings from the dough.Place the dumplings in a perforated cooking dish.

Cook in a steamer at 100 °C for about 15 minutes.

The dumplings can also be cooked normally in the pot. To do this, add a little more flour if necessary and let the dumplings simmer gently for about 10 minutes.
