Instructions:

Skin, pit and quarter the apricots. Place in a saucepan with the white wine, ginger and 1-2 tbsp. sugar and bring to the boil briefly until the apricot pieces break down.

Peel and dice the mango. Stir into the hot apricots and season everything together with sugar and juice of one lemon.

Leave the fruit to cool and bring to the table sprinkled with the amarettini. If you like, you can also offer a scoop of vanilla ice cream.
